One of the information panels here explains that the land that I'm crossing is actually farmland. There are about 12 farms along the next 500 km, each typically about 40 km long by 100 km wide, or a million acres. That's why there will be cattle grids across the road occasionally. Because this area is so dry, the land can only support about six sheep or one cow per square kilometre. I wonder how the farmers ever find their animals.

This board doesn't say anything about the railway line, which stays about 100 km North of the road all the way across this empty part of Australia. It has tiny stations which are also about 40 km apart so I would guess that each of them is also just a farm. Occasionally, I have passed the entrance to a dirt road, roughly 100 km long, which connects one of them to the highway.
